I love meat, giggity.
But I also like having meals where I don’t have to worry about cooking any meat.
I recently found the recipe for Butternut Squash and Black Bean Enchiladas Skillet and had to make it.
I did change up the recipe a little bit since we have Rylie eat whatever I have, and the original recipe has jalapeno in it. I also took out the cilantro since I absolutely hate the stuff and I used flour tortillas since we had no corn tortillas in the house (the version I made is down below in the recipe box).

Since I didn’t have an oven proof skillet, I transferred all the yummy goodness into a 9 x 14 inch glass baking dish and broiled it for 3 minutes.

I really liked this meal. Rylie only touched the black beans and then decided she wanted “apple” which means she wanted applesauce. Go figure.
This had just the right amount of cheese and bite for my tastes. The seasoning is great and the black beans add a great source of protein. Yummy!

What is your favorite Vegetarian dish?
This sounds yummy! I have never thought about using squash in enchiladas. I bet it would trick my picky eater to getting more veggies.

this look delicious. I just wish i could cook like this haha i know the recipe is here but i feel like it would just look like a brown mess if i tried to make this.

I think this is perfect for a post workout snack. it all has the nutrients. and it is very tempting.

It is! If you have a cast iron skillet it makes things really easy! You can just pop it straight from the stove to the oven and you don’t even need a 9×14 pan.
